Hello, I am Madhura and welcome to MadhurasRecipe Marathi Let’s see how to make tandoor chicken today. Monsoon is on. Feels like having chamachamit. Vegetarian people have option of pakoda so non vegetarian people have. But they can have somethig different too. Let’s see how to make tandoor chicken today. We are making it without oven, in cooker & on gas. Let’s try such combination. Really easy recipe. You can make this from ingredients available in your kitchen. To begin with take 2 leg pieces. Wash them really good & dry. Make slits on it with knife So that the masala enters well inside. The flavor reaches well inside. Masala ouside & dry inside, doesn’t happn so. So make slits on it from both sides. Add 1 tsp ginger-garlic paste on it. Add 1/2 tsp turmeric powder Add salt to taste & red chili powder. Rub all these spices well to chicken from both sides Masale should enter the slits as well. Massage these spices well to the leg pieces. After coating the leg piece well from both sides cover it & transfer it into freeze to marinate for at least an hour. For making tandoor the more you marinate the chicken the better it tastes. So rest it for an hour. After marinating chicken for an hour take it out of the freeze. Let’s spread masala for upper coating. Add 2-3 tsp curd. Do not much. Or it will come off. Try to use thick curd. You can keep it in a cloth Drain water from it & use. If the curd is runny like buttermilk then it won’t stick to chicken. So this is very important step. The curd should be thick like chakka. Very important thing. Add 1 tsp coriander powder, 1/2 tsp cumin powder, 1 tsp garam masala, salt to taste & red chili powder. Add 2-3 tsp cron flour. Why corn flour? Corn flour gives nice binding to curd, masale. At the same time The crisp that you want to tandoor, corn flour gives that crisp really nice. So corn flour is a must. Don’t skip corn flour. You can add rice flour instead of corn flour. But do add. It is necessary. Add rice flour or corn flour. Add 2 tsp oil on all this masala that we made. Yes, oil is needed. To cook it well. Mix the masala well & coat the leg pieces well with this masala from both sides. Smear the masala really good. Rub it instead of coating. Cover & marinate it for at least 3-4 hours. I am saying 3-4 hours as we don’t have much patience. It is the best if you marinate over night. It becomes juicy & succulant. If you don’t have time then for 3-4 hours. If you want to make it on Sunday, Then I will suggest that marinate this on Saturday night. Make tandoor next day & enjoy. It turns out nice. The more you marinate the tastier & juicy it will be. Next step after marinating, I had marinated for 3 hours Really good. Taken tandoor out of freeze. Is has got nice coating too. What to do now? Add a little water at base of cooker Do not add much. Chicken should not release moisture. Add less water. If you add 1″ regularly then add 1/2″ water. Put an empty pot at the base. Do not add anything, water, salt in that pot. It should be empty. Place the cooker jali or a plate on it. Place the pieces of chicken on it well. Close the lid Cook on medium heat until 3 whistles. Yes, 3 whistles. You can brush a little oil if you want. But not needed. We have added oil while marinating. Cook on medium heat until 3 whistles. Cook the chicken really good. I have cooked the chicken. Let’s take it out & check. Yes, perfect. You can check with fork. It is alomst well cooked & is looking nice & juicy inside. What to do now? Next step is roasting. Roasting on gas. How to roast? It will get that restaurant style tandoor flavor. Will tell you that. What to do? Place a charcoal on the flame of the gas. Try to use wooden charcoal. If you eat, you won’t have problem So use wooden charcoal. trun on the gas. Insert the tandoor that we cooker in the skewer. If you are using wooden skewer then soak it in water for 2-3 hours. Or it will burn in heat. I had used wooden. But it couldn’t bear the weight. Leg piece we very heavy. So shifted to metel skewer later. Insert in skewer & raost on gas well from all sides. It gets nice crisp. It gets perfect tandoor color. It turns perfect as we get in hotel. You can see. I have roasted 2 leg pieces well on gas. Open with fork & check. You can see inside. It is nice & crispy from outside due to corn flour. But it is nice & juice inside. The misoture is still retained in the chicken. if you roast directly in bhatti then all the moisture gets dripped. But we have pressure cooked it. So the moisture is retained. Tandoor chicken is crispy outside, nice & juice inside. Do try it. Very simple to make & easy process.
